Umami - 2023 - Le Quai à Raisins
Imogen Berry & Robin Althoff

A blend of 56% Muscat and 44% Grenache from biodynamically-managed vines planted on micaschist plots from winemakers friends. Hand-harvested and naturally vinified: direct pressing, settling, bottled with 22 g/liter of residual sugars to create effervescence in the bottle, 9 months of aging on laths, disgorged manually, then the wines are finally bottled with a crown cap without any dosage. No fining, no filtration, total SO2 of 20 mg/l. Extra-brut sparkling.
