100% Cinsault from old vines grown organically and certified in the process of converting to biodynamics, planted in 1969 on limestone soils. Manual harvest. Natural vinification: total destemming, 12 days of maceration, pressing, one year of aging in different containers: in sandstone jars, in casks that have seen several wines and in stainless steel vats, followed by four months of maturation in vats. Bottled without fining or filtration, just a micro-dose of sulphur.
