Kevin Bouillet, vintage 1992, is pure Jura through and through: born in Lons-le-Saunier, from Pupillin, he grew up watching his grandparents work the vines, the parents of his mates who made wine, so he'd already put in some cellar time... And yet he went a totally different way, picking up a degree in public law in Besançon... go figure! Before finishing the Master's, he took off on a whim to New Zealand at the end of 2015, telling himself he'd at least catch a harvest out there. Turns out no harvest (!)but by the time he got back to France, his mind was made up: he’ll be a vigneron. Kevin did his apprentice at Domaine de la Tournelle, then spent a stretch in Australia. Back to his roots: he settled in Pupillin in 2019 on 2 hectares (while still working part-time at La Tournelle), then went all in in 2020 with 4 hectares total. He's got the right mindset: "keep making wines we actually like to drink," stepping in "only when needed."

She's fresh, she's so fresh!!! This wine is pure pleasure—extremely easy to drink, with notes of red berries, red currant jam, and cranberry... Light and balanced on the palate, juicy, with a natural yet refined style. It really wakes up the taste buds!

Red currant, tart cherry, pepper and spices, dried flowers... Highly drinkable on the palate, smooth, fresh, subtly spiced, with very fine tannins—this is clearly a winemaker who knows his craft. Best enjoyed slightly chilled, perfect as soon as the sun comes out. May have some fizz.

This is one of the team’s favorite wines, and it’s what convinced us to bring Kevin Bouillet on board! A fruity, indulgent, mineral-driven Chardonnay that’s complete, on pear, mirabelle plum, white flowers... Its rich texture (this is the Jura!) is balanced by a lovely, crisp tension.

With notes of apricot, yellow peach, candied lemon, almond, and hazelnut... The palate is as complex as the nose, enhanced by lovely saline notes and great minerality, with a superb balance between nice body and lovely tension. Great ageing potential.

A truly wonderful wine with notes of tea, hazelnut, fig, dried fruit, honey, and biscuit... This complexity carries over to the palate, where the 17.5% alcohol is deliciously balanced by the sugar and a remarkable finesse.
