A brut cider made primarily from the Bei variety (an ultra-local sweet-tart apple), blended with other tart apple varieties, mainly sourced from the cidery’s own orchards, which are organically farmed and located in the town of Clohars-Carnoët in southern Finistère. Pressed, fermented using indigenous yeasts, naturally carbonated, and aged briefly in tanks. Bottled without fining or filtration, and without pasteurization or added sulfites.
