A complex and intriguing nose of white fruits, quince, wild herbs, and Earl Grey tea… On the palate: crisp, light, incredibly fine and delicate, with very soft tannins. Original, aromatic, and elegantly crafted.
Pinot Gris from old vines farmed organically with biodynamic practices, planted at 550 meters altitude. Hand-harvested on September 11, 2023. Cold pre-fermentation maceration for five days, with a pied de cuve of indigenous yeasts added to the grapes. Daily punch-downs over 13 days of maceration, followed by gentle pressing. Malolactic fermentation completed, with 10 mg/L of SO2 added. Aged for six months in tanks, lightly filtered one week before bottling at the estate on April 17, 2024, with a final sulfur adjustment.
