Notes of violet, raspberry, and spice… The ageing in oak brings out all its depth and character. A complex, elegant, and flavourful wine with a peppery structure that, as Guillaume puts it, “will pair beautifully with game dishes, adding depth and harmony to every bite.”
100% Syrah from old vines farmed organically, planted in Chamoson at 500 meters altitude. Hand-harvested on September 20th, 2022. Vinification: 5-day cold pre-fermentation maceration, followed by 15 days of maceration with one daily pigeage, gentle pressing, then 12 months of ageing in oak barrels, 30% of which were new. Light filtration one week before bottling, and SO2 adjusted to 25 mg/L of free sulphur. Bottled at the estate on December 5th, 2023. 883 bottles produced.
Guillaume Bodin, 38, is a winemaker-filmmaker and globe-trotter of biodynamics, now at the helm of Domaine des Petites Planètes, which he founded in 2022 in Chamoson, Switzerland.
