A 100% Dolcetto cuvée, from 40 year-old vines, cultivated on the clay-limestone soils of the Tassarolo and Gavi vineyards. Vinification: macerated 4 weeks, matured in vats and casks for 24 months. Zero sulphites added at bottling, and no filtering. Nibiô is the local name for Dolcetto, a grape varietal cultivated for more than 1000 years in this region.

Stefano Bellotti was a living legend, Italy’s Pierre Overnoy if you will, settled since 1977 in the hills of Novi Ligure between Alexandrie and Gênes (Piedmont). Stefano was 18 years old when he inherited this family farm which comprised just one hectare of vines. And so, it was from almost nothing that Italy’s father of biodynamic viticulture got his start.
