Rami - 2021 - Giusto Occhipinti

A blend of 50% Grecanico Dorato and 50% Inzolia, two indigenous grape varieties of Sicily, from 15-year-old vines grown organically, planted in the South-East of the island, at around 240 meters above sea level, on limestone soils with of silica and clay. Vinification: manual harvest in small crates, destemming, maceration for 10 days, fermentation with indigenous yeasts, aging for about 9 months in cement vats. Just a micro-dose of sulfur during bottling at the Estate.
