A blend of Georgian white and red varieties — Saperavi, Rkatsiteli, Mtsvane, Khikvi, Mujuretuli, Aleksandrouli, Tsulukidze… from barely five rows of biodynamically farmed vines, co-planted in the early 2000s (Elisabetta’s husband had planted around 150 varieties for study, keeping only the best). Hand-harvested at each grape’s maturity, destemmed, then six months of berry maceration in clay amphorae crafted by Juan Padilla. Racked from the amphorae and bottled directly. Unfined, unfiltered, with a micro-dose of sulfur.

Elisabetta Foradori cultivates 26 hectares nestled amidst the Dolomite Mountains, in Mezzolombardo, on the Campo Rotaliano plain. Her family estate was founded there in 1901 on an exceptional terroir.
