Grenache Noir from the Le Pelat parcel, on the plateau of Leucate, near the seaside. The whole estate is certified organic. Manual harvest in small crates, only in the morning. Vinfication: maceration of the full bunches for 10 days, soft and slow pressing in order to keep the fruity aromas. End of fermentation in tanks and aging for 6 months in barrels that have seen around five wines. Bottled in spring, zero sulphur added!
Marc Castan lives in Leucate in France’s Aude department. This future enfant terrible was born in Narbonne, where he grew up impassioned by both land and sea.
