60% Carignan, 30% Mourvèdre, 10% Grenache, Syrah and Cinsault, from 25–30-year-old vines farmed organically and planted on limestone marl soils over clay, silt and silica. Hillsides facing North, East and South-West. Hand-harvested. Whole-cluster vinification, two weeks of maceration in open vats without extraction, gentle pressing, transferred into barrels by gravity. 18 months of ageing, including 12 months on fine lees in 12 hl and 31 hl casks and demi-muids. Unfined, very lightly filtered, micro-dose of sulphur.
Rémy Pedreno
Rémy Pédreno, the man behind the famous Roc d'Anglade estate, is definitively one of the Languedoc leading winemakers.
