Mondeuse from organically farmed vines, exposed south/southeast and planted on clay-limestone soils. Grass cover in the vineyard, severe de-budding, and manual harvesting at full maturity. 100% destemmed, 10-day maceration with very gentle extraction, no punch-downs, only a few light pump-overs using a watering can. Pressed in a vertical press, then transferred to barrels for the end of fermentation and aging for 24 months in 3-to-5-wine-old oak barrels. Unfined and unfiltered, 2gr/hl of SO2 added during racking, two months before bottling.
