100% Mondeuse, a cuvée produced from purchased grapes, from organically farmed vines planted on limestone scree soils. The grapes were harvested by hand in small crates, with controlled yields. Natural vinification: 10 days of maceration, gentle pressing, 8 months of ageing in 600-liter demi-muids barrels that have seen several wines, and 4 more months of aging in vats. Bottled in October 2024 without fining, filtration, or any added sulphur.
