70% Pinot Noir, 30% Gamay from biodynamically farmed vines, planted on grey marl soils at the foot of the slopes beneath the Massif des Bauges. Hand-harvested at full maturity, yields around 25 hl/ha. Vinification: 100% destemmed, 10-day maceration with very gentle extraction, no punch-downs, only light pump-overs using a watering can. Pressed, then aged for 12 months in large oak casks that have seen 3 to 5 wines. Unfined and unfiltered, just 2gr/hl of added SO2 during racking, two months before bottling. 10 months of maturation in bottles.
