70% Cabernet Franc and 30% Cabernet Sauvignon, from organically and biodynamically farmed vines planted on a total of one hectare, facing south/southwest and growing on an orthogneiss subsoil. The grapes were harvested by hand and moved in the cellar by gravity. Natural vinification: direct pressing of the Cabernet Sauvignon and a short vatting period of the fully destemmed Cabernet Franc for 4 days. Blended for the fermentations, aging in concrete tanks for one year. Bottled without fining or filtration, with only a micro-dose of sulfur.
