Syrah complemented by a touch of Mourvèdre, less than 10%, from organically farmed vines planted at the creation of the Domaine on former garrigue. This is the terroir that gives the darkest, most wild, and most naturally woody wines, as Marlène Soria tells us! Hand-harvested at very high ripeness, with total destemming, classic and long maceration, and an extremely long ageing of more than 8 years in concrete vats, enamelled steel tanks, and stainless steel vats. Bottled and then further refined for at least one year in the cellars of Peyre Rose.
