Blend of 60% Merlot, 20% Cabernet Sauvignon and 20% Cabernet Franc, from organically farmed vines planted on deep white clay and flint soils. Hand-harvested, with yields around 40 hl/ha. Gentle, natural vinification: 20 to 30 days of infusion, followed by 12 months of aging in concrete tanks, ovoid vats, large casks and old barrels. The final blend is made after these 12 months, then the wine spends an additional winter aging in concrete vats. Unfined, unfiltered, with just a micro-dose of added sulfur.
