This is fruity, taut, fresh and intense juice with notes of white fruit and quince... Palate: possible presence of gas, but it's salivating and deep, delicious, the finish is elegant, saline and mineral. Marvellous for cellaring, Cyril’s wines require time and patience.

A cuvée made from old Macabeu vines, planted in 1953 and 1955 on hillside vineyards with gneiss soils. Viticulture and vinification are straightforward and natural; it’s above all about beautiful grapes picked at ideal ripeness. This white wine is matured 8 months in demi-muid barrels. It is unfiltered, instead spending an extra month in vats to be naturally decanted before bottling. Just a tiny pinch of sulphur.

Cyril Fhal launched his 5-hectare estate in 2002 in Latour-de-France, just 5 km from Calce, home to numerous renowned winemakers. The young Parisian, his viticulture/oenology diploma in hand, had been on the look out for parcels in the region when he stumbled upon these old vines – between 50 and 100 years old – which no one wanted to work, because they were planted on steep slopes unsuitable...
