Melon de Bourgogne (the grapes were purchased) from organically farmed vines planted on decomposed gneiss soils. Hand-harvested at full ripeness. Natural winemaking at Tizh cellar: one third of the grapes macerated as whole bunches for 24 hours, the rest slowly pressed in a manual press over 24 hours, then the same pressing for the macerated berries, blending of the juices, fermentation and ageing on the lees in fibre tanks, without any settling nor racking. Bottled in April 2026 with just a micro-dose of sulphur, unfined and unfiltered.
