The name in French is a bit misleading – this is not a Blanc de Noirs (usually a white wine made from Pinot Noir) but a 100% Chardonnay grown on marls. ‘La Rouge’ is the name of the 0.55-hactare plot, which has iridescent Triassic marl soils. Organically grown, hand-harvested on September 21, natural vinification: direct pressing of the whole bunches, settling overnight, fermentation and long aging in demi-muids and barrels, with regular topping up for... 7 years! Bottled on September 8, 2025, without fining or filtration, and no added sulfites.

Tony Bornard is the son of the famous Jura figurehead Philippe Bornard , today retired. They are neighbours of the famous Pierre Overnoy, andhey reside in the oldest building in the village of Pupillin. Tony struck out on his own to quietly create his estate as well in 2013.
