100% Savagnin from vines grown biodynamically, planted on Triassic marl and Bajocian limestone scree. Harvested by hand on September 26. Vinification: one month of maceration of the whole bunches, slow pressing in an old ratchet press, 11 months of aging in a dolium, a terracotta Italian amphorae. Bottled on September 9, 2019 without fining or filtration, no added sulfites. Why Mammoth? Because these are cuvées that, like the Mammoths in their day, have existed since 2016 but will disappear for good after the 2020 vintage.

Tony Bornard is the son of the famous Jura figurehead Philippe Bornard , today retired. They are neighbours of the famous Pierre Overnoy, andhey reside in the oldest building in the village of Pupillin. Tony struck out on his own to quietly create his estate as well in 2013.
