A 100% Chardonnay matured with fine and marc from the Jura. The unfermented juice undergoes gentle heating for 48 hours in a copper cauldron to concentrate its sugars, losing around 25% of its volume. The juice is then fortified with spirits (to stop fermentation and keep all the sweetness), for an alcohol content of 17%, with proportions of approximately 1/3 alcohol to 2/3 grape juice. Aged in casks for 20 months, bottled on May 4, 2020. Unfined and unfiltered, with no added sulfites.

Tony Bornard is the son of the famous Jura figurehead Philippe Bornard , today retired. They are neighbours of the famous Pierre Overnoy, andhey reside in the oldest building in the village of Pupillin. Tony struck out on his own to quietly create his estate as well in 2013.
