A blend of 13 Alsatian grape varieties, grown on granite, grey and marl limestone, at the foot of the slopes. The vines are farmed organically and according to the principles of biodynamic viticulture. Manual harvest and controlled yields. Vinification: direct pressing, transfer into old barrels so fermentation and maturation for a year on total lees. Bottled without fining nor filtration, just a micro-dose of sulphur (added at pressing).
