100% Chenin from 20-year-old vines cultivated using organic and biodynamic methods, planted at the top of the hillsides at an elevation of 350 meters on Kimmeridgian limestone soils. The grapes were harvested by hand and vinified naturally: full destemming, one-year maceration (yes, really!) of the berries in 800-liter amphorae, under the pomace, followed by gentle pressing, and aging in those same 800-liter amphorae for one year. Bottled without fining or filtration, and without added sulfur.
