100% Jacquère from old vines over 50 years old, farmed organically and planted on the Abymes terroir in the Chartreuse Massif. The vines grow on limestone scree soils (hence the name of the cuvée!), with clay subsoils, and the plot faces east. Hand-harvested and naturally vinified: direct pressing, fermentation, and aging in stainless steel tanks for about 10 months. Bottled at the estate with no fining or filtration, just a tiny dose of sulfur.
