A clean nose of morello cherry, cranberry, plum, and chalk... The palate is delicately tart, dense, invigorating, and deep, with a fine texture. Still young at this stage, but with excellent aging potential. A cuvée crafted for food pairings.
Pinot Noir from old vines grown organically and planted at an altitude of 500m in the Champ-Baron area of the commune of Saint-Jean-de-la-Porte, facing south-east. Harvested by hand with small crates on September 5th, 2023, sorting in the vineyard. Vinification: 75% of the harvest is destemmed, 8 days of maceration, light punching down and pumping over. Pressing, 11 months of aging in 5-wine barrels, two rackings. Bottled at the estate on July 12th, 2024, without fining and after light filtration. Just a micro-dose of sulfur: total SO2 of 28 mg/l.
