“All the freshness of a grape variety capable of reaching great heights,” says Ludovic! Very fresh and delicate nose with notes of lemon, citrus zest, flint, and white-fleshed fruits. Tense and precise on the palate, this wine is playing in the big leagues. Long and salty finish.
100% Jacquère from old vines grown organically and planted on two plots in Chignin, on clay-limestone soils. The plots are grazed by a flock of sheep until the end of March. Harvested by hand on September 27th, 2023. Vinification: 1/3 of the harvest is destemmed, 48 hours of maceration, slow pressing. No settling, 11 months of aging on total lees in vats, and 15% in barrels that have seen six wines. Bottled on July 12th, 2024, after fining (with bentonite) and light filtration. Micro-dose of sulfur: total SO2 of 34 mg/l.
