Blend for this new vintage: 70% Gamay and 30% Pinot Noir (old Burgundian massal selection), from vines planted just outside the village of Boudes. Soils are predominantly basalt with some limestone. Hand-harvested, macerated 10 to 12 days with just a few bucket pump-overs to moisten the cap, gentle pressing. Aged 12 months in old 228L barrels, then refined 6 months in bottle at the estate. Bottled unfined, unfiltered, 1.5 g/hl of sulfur at bottling.

Henri Chauvet, child of the 1987 vintage, is a new winemaker based in Boudes in Auvergne. After quitting his job in insurance banks, he got his viticulture and oenology diploma, and trained alongside Jérôme Bressy in Rasteau, then with the legendary Thierry Allemand in Cornas.
