De cendre et d'âme - 2023 - Henri Chauvet - Magnum

Domaine Henri Chauvet

Superb interpretation of this terroir, this encapsulates everything we love about Gamay from Auvergne, with its nose of Morello cherry, blackberry, spices... The palate is velvety, luscious, very fruity and balanced.

Blend for this new vintage: 70% Gamay and 30% Pinot Noir (old Burgundian massal selection), from vines planted just outside the village of Boudes. Soils are predominantly basalt with some limestone. Hand-harvested, macerated 10 to 12 days with just a few bucket pump-overs to moisten the cap, gentle pressing. Aged 12 months in old 228L barrels, then refined 6 months in bottle at the estate. Bottled unfined, unfiltered, 1.5 g/hl of sulfur at bottling.

During a car trip through Auvergne, he immediately fell in love with the region “and its incredible terroirs”. Lucky...
