100% Pinot Noir from organically farmed vines in Savigny-lès-Beaune. Sourced from a respected grower who shares the same values. Vinified in Boudes, Auvergne: whole-cluster maceration for 10 to 12 days in stainless steel and large wooden tronconic vats. Only bucket pump-overs to moisten the cap. Gentle pressing, aged 9 months in 228L barrels, without new oak. Unfined, unfiltered, 1 g/hl of sulfur at bottling. It also marks Henri's first time working with sourced fruit.

Henri Chauvet, child of the 1987 vintage, is a new winemaker based in Boudes in Auvergne. After quitting his job in insurance banks, he got his viticulture and oenology diploma, and trained alongside Jérôme Bressy in Rasteau, then with the legendary Thierry Allemand in Cornas.
