100% Gamay, selected from several parcels planted on granitic and sandy soils in the communes of Chénas and Chapelle de Guinchay in the Rhône department; 45-year-old vines, certified organic. Manual harvesting, grapes sorted on the vine. Vinification: whole bunches, no unnecessary interventions, no additives, no commercials yeasts. Maturation: 50% in vats and 50% in barrels for 10 months, no fining, no filtering, and a pinch of sulfites at bottling.
