100% Gamay from biodynamic vines planted in Saint-Romain-de-Popey, in the Beaujolais region, on granitic sand soils. Harvested by hand and vinified naturally at Emmanuel's cellar in the Coteaux du Lyonnais, which is why the wine doesn't bear the Beaujolais appellation. The maceration lasts about 10 days, with whole bunches and destemmed grapes, 11 months of aging, half in barrels and half in stainless steel vats. No fining or filtration, just a micro-dose of sulphur at bottling.
