Ultreïa is Latin for "further and beyond", and it's also an encouragement we say on the roads to Santiago de Compostela... and on these steep hillsides, to give us strength and courage! That's the essence of this wine: an invigorating, pleasurable, smooth juice, perfect for any occasion.
Gamay from old biodynamic vines planted on steep slopes between 400 and 600 metres above sea level, on a mix of bluestone and granite. The grapes are harvested by hand and vinified naturally, with partial destemming to create a mille-feuille of whole clusters and berries over a period of about two weeks. Gentle pressing and aging in stainless steel vats for one year. Neither fined nor filtered, it was bottled at the Estate with just a micro-dose of sulphur (1 gr/hl), in September 2024.
