100% Aligoté, this cuvée was produced with grapes purchased from Xavier at the Domaine des Champs de Thémis, one of the only organic winegrowers in the appellation. He is a former public prosecutor who took over his neighbour’s vineyards! The grapes are harvested by hand. Natural vinification: whole bunches are pressed 5-6 hours in a vertical press, then transferred mid-fermentation into old 350-litre barrels for one year, followed by one year in vats. Neither fined nor filtered.
