100% Aligoté from old vines farmed organically. This parcel was taken over by Sylvain in 2017, who grassed the vineyard—"it's in great shape now," he says. Hand-harvested at full ripeness. Whole clusters pressed directly in a small vertical press, fermentation starting in tanks before being racked into barrels mid-fermentation. Aged for one year in barrels, then eight months in tanks. Just a tiny touch of sulfur at bottling.
