An eminently mineral nose, opening with notes of chalk, followed by white truffle, honey, pear and candied lemon. Creamy, tense, and ultra smooth, with a long, salty finish. One of our great favourites, built like an "an old style Meursault", as Sylvain likes to say!

100% Chardonnay, from 40-year-old vines farmed biodynamically, and planted on a plot of 23.2 ares with a soil of small pebbles over an iron-rich subsoil. The grapes are harvested by hand. Natural vinification: after 5-6 hours of gentle pressing in an old vertical press, the juice is transferred into barrels once fermentation has started, then the wine is matured for two years in barrels, 25% of which are new oak. Bottled at the estate without fining or filtration, and just a microdose of sulphur.
Sylvain Pataille
Sylvain Pataille is the winemaker at the helm of his eponymous estate in Marsannay, Burgundy, and quite possibly the revelation of recent years in the sector. A native of the village, he studied at the Beaune wine school and graduated as an oenologist in Bordeaux. Sylvain started from scratch more than 25 years ago...
