Chardonnay from organically farmed vines planted in 1986 on hard limestone soils with patches of brown clay. This comes from the Climat of Champ Salomon, right next to Clémengeots. Previously blended into generic Marsannay Blanc, this parcel now shines on its own, producing tiny, highly concentrated grapes. Hand-harvested, whole clusters pressed directly in a vertical press. Fermentation starts in tanks before being racked into barrels mid-fermentation. One year in barrels, then eight months in tanks. Just a micro-dose of sulfur at bottling.
Sylvain Pataille
Sylvain Pataille is the winemaker at the helm of his eponymous estate in Marsannay, Burgundy, and quite possibly the revelation of recent years in the sector. A native of the village, he studied at the Beaune wine school and graduated as an oenologist in Bordeaux. Sylvain started from scratch more than 25 years ago...
