100% Chardonnay, from 18-year-old vines grown biodynamically and planted on a 1-ha parcel near the commune of Courgis, on Kimmeridgian-era clay-limestone soils. Manual harvest, low yields, and natural vinification. Long fermentation in demi-muids barrels on fine lees without bâtonnage. Matured for one year in casks, without new oak. Neither fined nor filtered, just a microdose of sulphur before bottling at the estate. With the De Moors, the intentions are good, and the result is extraordinary.
