A 100% Chardonnay from three parcels grown organically – Bon Boire: old, 50-year-old vines; Vaux Debosc: 30-year-old vine; and Arche: 25-year-old vines, grown on a shallow clay soil, near the bedrock. Vinification: direct pressing, 50% matured on fine lees in casks and 50% matured in vats, for 12 months. Blending of the juices, followed by 6 additional months in vats. Bottling at the estate, with a sensible use of sulfites.
Edouard Lepesme
Edouard Lepesme worked until 2010 in the bulk wine trade. Then in 2011, he decided to pursue a degree in viticulture and oenology in Beaune, one of the most complete training programmes to become a vigneron. Diploma in the bag, he headed off to work in Chablis with (well, well!) Thomas Pico and Alice & Olivier De Moor , continuing down to Claire Naudin ’s Côte de Nuits Domaine,...
