Chardonnay from the Estate's vines, grown organically (and no sulphur in the vineyard), planted at 470 meters altitude, on the other side of the small valley separating it from Fussey village. The soils are plowed by horse. Manual harvest, fermentation and aging in 350-liter barrels, without new oak, thorough stirring of the lees during the summer, then transferred to stainless steel tanks on fine lees for a total of 30 months of aging, before bottling in February 2026. Unfined and unfiltered, only a micro-dose of sulfur.
Tomoko et Guillaume
Tomoko Kuriyama and Guillaume Bott form the magical duo of Chanterêves. As a couple both in life and in the vineyard, they established their Maison de vins in 2011, an haute-couture négoce based in Savigny-lès-Beaune, nowadays also an Estate with their own vines. Tomoko is originally from Japan, and was exposed to wines from a very young age, having her father passionate by great Burgundy...
