"Epilogue" for Henri's last harvest on this vintage, but which could just as well be a nice epilogue to your dinner. A real treat, sweetness for adults carried by notes of apricot and candied orange, a deep wine of great complexity.

100% Chardonnay from vines planted on iron-rich clay soils. Manual harvest on the 6th of November 2021, with a lot of noble rot. Direct pressing in an old vertical ratchet press. Alcoholic fermentation for three months in vats, that naturally stopped at 12.5 grams of residual sugar. Not fined, nor filtered, three grams of sulfur to stabilize the wine and its sugars. 12 months of ageing, only a hundred bottles produced.

Henri Chauvet, child of the 1987 vintage, is a new winemaker based in Boudes in Auvergne. After quitting his job in insurance banks, he got his viticulture and oenology diploma, and trained alongside Jérôme Bressy in Rasteau, then with the legendary Thierry Allemand in Cornas.
