Le Zèbre - 2021 - Champagne Boonen

Julien Boonen

What's black (Pinot Meunier) and white (Chardonnay) and found in the "cirque" of Festigny? Le Zèbre (a zebra), of course! Citrus and candied lemon, a palate of fruit paste and mirabelle plum, with a lovely balance between richness and minerality. A pure, fresh and crystalline finish.

Half Chardonnay and half Pinot Meunier, from old vines averaging 50 years of age, planted in the Cirque de Festigny on clay-loam and limestone soils. Based on the 2021 vintage, and produced exclusively in that vintage! Hand-harvested using clayettes, the grapes are perfectly preserved thanks to a refrigerated container. Direct pressing, vinification in temperature-controlled tanks, with no additives except for a micro-dose of mineral sulfur. Bottled and aged for 24 months on slats. Dosage of 4.5 grams per liter; this is an extra-brut.
