100% Sciacarello from organically and biodynamically farmed vineyards, planted on clay-granite soils with a south/west exposure, in a warm and windy climate with a wide range of temperatures between day and night. The grapes are harvested by hand and vinified naturally: indigenous yeasts, partial destemming, crushing, daily punch-downs, pressing, aged for 18 months in 500-liter demi-muids, with 60% new oak. Bottled at the estate, with a low sulfur content.
