Onda - 2020 - Gabrio Bini
Serragghia
Perhaps the finest Syrah we’ve ever tasted. Its profile is so slender and fine, you’d never guess it’s Mediterranean. A wine like no other, it’s pure "voodoo" juice, with aromas of smoky black fruit, maquis and a mineral backbone. Evolves with every sip – it’s a voyage in a glass.

Syrah from old vines farmed biodynamically and planted in Pantelleria, a small volcanic island located between Tunisia and Sicily. The vines are harvested and worked by hand, with low yields. Natural vinification, with zero additives: the grapes are moved in the winery by gravity, are 100% destemmed, followed by a long maceration, and maturation in terracotta amphorae (dolias). No fining, no filtering, no added sulphites, resulting in ultra low total SO2, an approach requiring a master’s touch! A wine for meditation, the fruit of a wild vineyard.

Gabrio Bini
Gabrio Bini, 70 years young, lives and works on Pantelleria, a tiny volcanic island in the strait of Sicily, halfway between Sicily and Tunisia. The neighbour of Bond-girl-turned-winemaker Carole Bouquet, Bini has had several lives as well: architect in Milan, right-hand to a (very) big name in haute couture, before becoming consumed with a passion for this island – and for natural wines....
