100% Grillo, from young vines farmed organically on a 2-h parcel of sandy, clay-limestone soils in Santa Margherita, Sicily, in the Hyblaean Mountains in the southern part of the island. Harvesting is done by hand, with yields around 30 hl/ha. Vinification: the grapes are de-stemmed, macerated for 48 hours with indigenous yeasts, followed by fermentation and maturation in concrete vats and Austrian oak barrels that have seen several wines for 12 months. Neither fined nor filtered, with a microdose of sulphur at bottling. Just 8436 bottles produced.
