100% Dolcetto from 30-year-old vines, grown organically and planted on a 0.8-hectare plot which has limestone and marl soils. Manual harvest. Natural vinification without inputs: light treading of the whole bunches, 15 days of maceration in 50 hl cement vats, aging in these same vats. Bottled without fining or filtration, sensible use of sulphur.
