100% Chardonnay from 40-year-old vines grown organically on limestone scree. Harvested by hand. Vinification: direct pressing, transfer into barrels, so start of fermentation in barrels, maceration of the Savagnin skins from the 2021 harvest in the Chardonnay juice for a few days, so that the fresh yeasts in the must could complete the alcoholic fermentation. Aged for a total of 26 months, in topped-up barrels that have seen several wines. Bottled in November 2022 without fining or filtration, with zero added sulfur.
