100% Pinot Noir from 46-year-old vines, cultivated biodynamically and planted on a 1.8-hectare plot of Bajocian limestone on the surface, over a bedrock of Lias limestone. The vineyard is ploughed and maintained with homemade compost and herbal spray treatments. Manual harvest, three weeks of maceration of the wole clusters in conical wooden vats, then one year of maturation in Burgundy oak barrels, 15% of which are new. A light dose of sulphites is added after malolactic fermentation. The wine is then bottled without sulphur or filtration.
