100% Savagnin Vert. A single vineyard cuvée, from a parcel of vines planted in 1933 in Chalasses, on a terroir of blue marls. The grapes grown organically and harvested by hand at full maturity. Vinification is natural and without additives: direct pressing, seven years of maturation in demi-muids barrels on the lees, without new oak, in a humid cellar, with topping up of the barrels (the wine is non-oxidative). A much longer aging for this vintage, released one year after the 2020. No added sulphur, and no fining or filtration.

Jean-François Ganevat represents the 14th generation of vignerons of his family in Rotalier, in the south of Jura. After years working as the cellar master of Jean-Marc Morey in Chassagne-Montrachet, he took over his family’s estate in 1998.
