100% Pinot Noir, this cuvée is made from grapes purchased from organic vineyards. The grapes were harvested by hand and vinified naturally: semi-carbonic maceration at cool temperatures (12/14°C), 10 months of ageing in casks that have seen several wines. Bottled without fining or filtration, with no sulphites added.
Jean-François Ganevat represents the 14th generation of vignerons of his family in Rotalier, in the south of Jura. After years working as the cellar master of Jean-Marc Morey in Chassagne-Montrachet, he took over his family’s estate in 1998.
