A 100% Savagnin cuvée from organically grown vines planted on gray marl soils. This yellow wine is nicknamed the Gold of the Jura. The harvest is late (second half of October) and the vinification is entirely natural. This wine was placed in a Burgundy cellar for 10 years under a veil, without any topping up. A veil of yeast and fungi forms on the surface of the barrel and feeds on the wine during this period. One-third of the total volume evaporates. This period passed, we can then do "the percée" and bottle the wine.
Jean François Ganevat
Jean-François Ganevat represents the 14th generation of vignerons of his family in Rotalier, in the south of Jura. After years working as the cellar master of Jean-Marc Morey in Chassagne-Montrachet, he took over his family’s estate in 1998.
